Sunshine Breakfast:Whole grain Chocolate Cherry Berry Muffins with Organic Scrambled eggs and Instant Coffee
Sunshine in Cleveland is a Celebration ,with a ray of sunlight in to my window and warm plate of wholesome breakfast,I get the most of my mornings.
These muffins are the blend of my favorite flavors,use any fresh berries of the season and enjoy with Scramble eggs on side,use Organic kind which are richer in Omega 3s and 25% lesser in cholesterol.And cuppa instant Coffee makes this a complete breakfast.

Ingredients you'll need is
1 1/2 cups whole wheat flour
1 tablespoon toasted wheat germ or 1 tablespoon flax seed meal
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 cup honey or 1/2 cup brown sugar or 2 tablespoon Agave nectar
1 large Organic egg
1/4 cup Olive oil
3/4 cup cherry juice or pomegranate or cranberry concentrate
1 teaspoon pure vanilla extract
1/2 cup dried tart cherries
1/4 cup chopped toasted walnuts or pecans or cashews or almonds
1 cup fresh berries in the season(I use black berrries)
To make the Muffins
preheat oven to 400 F.
In a mixing bowl, combine flour,wheat germ, baking powder, cinnamon,cherries,nuts ,berries and salt. Set aside. In another bowl combine the eggs with honey, oil,juice concentrate and vanilla extract. Mix wet mixture with the dry ingredients . Stir just until combined.
Spray your muffin tray with cooking spray or lay the parchment cups. Spoon batter into each prepared muffin cup. Bake for about 20 minutes, or until golden brown.Serve warm.
Makes about 6 medium muffins
Serve with Organic Scramble eggs and hot cuppa coffee(made with reduced fat milk) for a wholesome breakfast.
