Find this veggie rich recipe of Vegetarian Lasagna (with Kale,Zucchini and Broccoli) at Wandering Chopsticks, the featured blog of month for Tried and Tasted Event. The Host of the month is Trupti of Trupti´s Food Corner .I used low fat ricotta instead of mozzarella, although one can used both kind of cheeses. The juicy vegetables fill in perfectly, truly a wholesome alternative to those on no meat diet.

Looks great. Wondering if we can use our asian greens -- senposai, natsu rakuten, and tatsoi -- to prepare. We'll have to experiment.

Vegetable Matter,
If kale works then any green should work ,even bitter greens can be used combined with mild greens like spinach :)

That looks really yummy Yasmeen. So hearty, healthy and tasty. Tell me something, do your kiddos eat food like this? Mine go thru phases. The lil' guy will eat raw stuff but usually doesn't enjoy cooked greens and veggies.
