Almond oat muffin is an excellent morning bread with combination of nuts ,dry fruits and whole oats. A smart way to add grains and fruit to your day is to make, bake and take along your own snacks rather than stopping for a bakery's high-fat goods.
Ingredients needed are
11/2 cup low fat buttermilk
2 organic eggs
3/4 cup whole rolled oats
3/4 cup whole wheat flour
1/2 cup all-purpose flour
1/4 cup almonds corsely chopped.
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 cup Olive oil
1/2 cup brown sugar
1 teaspoon ground cinnamon
Handful of dry cherries or cranberries
Makes about 6 medium muffins

To the buttermilk mixture ,add the eggs, oil, brown sugar, chopped nuts(reserve few to top on muffins) and stir just until combined
