Chocolate and Caramelized Banana Mango Cake



Ripe bananas and mangoes in my fruit basket, delicious way to relish such ripe fruits is with chocolate. A chocolate bread or cake with fruits would be more hearty and filling. Found the recipe which looked very tempting to try with my ripe fruits and decadent chocolate. The original recipe just used bananas, i also added mangoes to add more fruity flavor to the cake.

Ingredients needed
2 cups all purpose flour
1/2 cup cocoa powder
1 tsp baking powder
1/4 tsp salt
1/2 tsp baking soda
1/2 cup Olive oil
3/4 cup brown sugar
2 large Organic eggs
1 ripe bananas
1 ripe mango peeled and chopped.
3/4 cup buttermilk
1/4 cup semi sweet chocolate chips

To make the Bread
Preheat oven to 350 degrees F .
Prepare the Filling
Heat 2 tablespoon of the sugar in a large heavy-bottomed saute pan over medium-high heat. Let stand until edge of sugar starts to melt and turn golden. Carefully swirl pan and continue cooking until sugar is a golden-brown caramel, 6 to 8 minutes. Add banana, chopped mangoes carefully roll in sugar, and cook, turning fruits occasionally until just soft, about 5 minutes. Transfer fruits into a bowl and mash them.
Make the Batter
Sift together the flour, cocoa, baking powder, baking soda and salt into a large bowl.
In another mixing bowl, whisk eggs and add sugar ,buttermilk and oil until well combined. Mix the egg mixture in the flour until combined. Stir in the chopped chocolate.
Bake the Cake
Pour half of the batter into a loaf pan greased or lined with Aluminum foil.Pour the caramelized mashed fruits on top of the batter and top with the remaining batter.
Bake for 30 minutes, then cover with aluminum foil and bake for another 40 minutes or until a toothpick inserted in the center comes out clean.
Remove the pan from the oven, let cool for 15 minutes. Flip the pan to get the cake out, remove the foil and place it on a wire rack. Let cool then slice and serve.

My little one could not wait till mama finished taking pictures of this delicious cake.
