Tasty Spinach Tofu
This recipe is prepared just like the famous "Palak Paneer" recipe. I just substituted fatty paneer(cottage cheese) with healthier Tofu
Ingredients you'll need are
1 lb spinach
1/2 lb Firm Tofu
1 medium onion
1 plum tomato
1 tablespoon coriander powder
1 teaspoon red chilly powder
1/2 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon salt
2 tablespoon Extra Virgin Olive Oil
To make this curry
Cut Tofu into cubes.Keep aside.
Blanch spinach in boiling water for couple of minutes and puree in a blender.
Heat EVOO in a saucepan on medium flame. Add chopped onions and whole spices(cumin,cinnamon and cardamom) saute for a minute before adding minced ginger and garlic. After few seconds add the turmeric , other powders and spinach puree. Simmer and add the tofu pieces. Cook for another 10 minutes and serve with rice or bread.
