Palak Tofu and Palak Paneer with added nutrition of Mom's love.Paneer Versus Tofu Nutrition Analysis.

" You should serve your mother, then your mother, then your mother, and then your father ".(A simple hadith[Saying of Prophet Muhammad(pbuh)] that speaks volumes about mother's importance) Mom's have a special place in our hearts and deserve immense respect for their unconditional love and endurance.Never realized a mother's job can be so challenging until I became a mother myself.Motherhood requires lot of patience for raising a child right from the pain of birth ,changing countless diapers, the prayers and sleepless nights when you are sick and tolerating those toddler tantrums and teen angst. As our first teacher ,moms help us learning the first words, take the first steps and first lessons in manners that eventually shape our future.Moms stand by you through every thick and thin of our life.Did I miss something,Yes! its mom who makes the best meals.Nothing like warm home made food made with added nutrition of Mother's love. My Ammi is a master cook besides be...

Strawberry Cobbler With Orange Carrot Frozen Yogurt

Strawberry cobbler is another one of the delectable baking recipes I found in the Book Reader's digest Baking with Love ,borrowed from the library here. The book is so cool,I'm not sure I'll ever return it back,I've already renewed it 8 times already now(almost 6 months). The Original recipe called for plums, but I used strawberries instead which are equally delicious ,in fact you could use any kind of berry ,Cherry Cobbler is another classic Cobbler recipe. The warm cobbler served with frozen yogurt made with fresh home made Carrot and Orange juice makes this dessert all the more scrumptious. And did I say I made this special dessert for a very special occasion, my wedding anniversary .My boys absolutely love juicy berries, more than me or my hubby ,this dessert was most devoured by the little sweet hearts.I'm pleased to send this recipe over to " Cooking for kids With Love ",a food event in memory of Pedatha ’s spirit of love and nurture, and her innate knowl...

Bitter Better Health - Methi(fenugreek) Soy Vegetable Cutlets

Bitter foods may not be pleasing to your palate. But the impressive health profile of some kinds of bitter foods might just want you to give them a try.Strangely, bitter foods were considered poisonous and not consumable for long.Until recently medical studies have shown some can offer amazing health boosts ,including prevention and fighting diseases.Read more about the studies here and here . Fortunately for me,bitter wasn't an alienated taste, some like bitter gourd and fenugreek were pleasantly familiar in mom's cooking. Tips on making the bitter more palatable : * Make the start with more commonly available ,like black coffee, cocoa and extra dark chocolate. * Balance the taste ,pair them with other mildly flavored fruits, nuts and vegetables to balance the unpleasant taste. For instance cooking bitter gourd\melon with onions can help even the bitterness. And Spinach with mustard greens worked perfectly in the ever so popular North India's favorite green side dish . * Use th...

Almond Cocoa with Home made Almond Milk(100% Dairy free), Almond milk Versus Cow's milk

Like many I assumed only dairy products milk\cheese\yogurt as good sources of calcium.Considering how big and powerful the milk industry is,people are made to believe that it is the only good source.Unless one chooses to become vegetarian for better health or search for alternatives due to allergies or lactose intolerance, the equally nutritive alternative sources like Soy ,Almonds, vegetables like Kale, broccoli,Okra, lentils like Urad , remain undiscovered. In my case it was my son's asthma which lead to hunt for alternatives.Excess intake of Dairy products are not recommended for asthmatics,as it can increase the mucus production.I have limited his intake to Organic reduced fat milk after the diagnosis ,I also substituted with alternative sources like above to make up for the daily required recommendation of calcium. He is used to the flavor of cow's milk, the change to soy milk with a distinct after taste was not liked hence I tried the almond milk with mellower taste, even that ...
